Borettane Onion is a traditional Italian variety from Boretto, in the Emilia-Romagna region. The onion bulbs are flat and relatively small.
The onions are harvested manually and carefully selected to assess freshness, consistency, and the possible presence of mold. This processing phase takes place outside the laboratory, in a dedicated area, to avoid introducing waste that could contaminate subsequent processing phases.
The vegetable is then introduced directly into processing rooms where it is washed.
Cooking is done in a stainless steel pot with an open lid.
The cooking liquid is a mixture of wine vinegar, water, sea salt, and lemon juice in varying proportions.
Subsequently, the product is hand-packed into jars and pasteurized in a pasteurizer.
