Gragnano benefits from pure water sources originating from the Lattari Mountains. This water, used since Roman times, is still employed today to produce the semolina. The pasta is bronze-extruded, giving it a rough texture that enhances its digestibility and allows it to better absorb sauces.
Gragnano is known as the 'Città della Pasta' (City of Pasta) in the province of Naples, where the tradition of drying pasta in the sun and sea breeze originated. Today, a slow drying process with ventilated air at low temperatures and for many hours (temperature below 55°C and never less than 24 hours) preserves the quality and flavor of a centuries-old tradition.
Our aim was to find a skilled artisan capable of producing a high-quality product using traditional methods and carefully selected raw materials while respecting the environment.
