The origin of Parmigiano Reggiano dates back to the 12th century during the Middle Ages. According to some sources, it might be even older.
The Benedictines and Cistercians of monasteries located in the plains near Parme and Reggio Emilia were the first producers of Parmigiano Reggiano. They used milk from the excellent local pastures and salt from the famous salt marshes of Salsomaggiore. One of its advantages was its ability to be stored for a very long time.
Over the centuries, the basic production methods have remained unchanged. This cheese is still produced in a natural manner.
Parmigiano Reggiano DOP is a hard, cooked cheese with slow maturation. It is made from raw, partially skimmed milk, obtained from cows primarily fed with forage from the original area. The milk cannot undergo heat treatments, and the use of additives is prohibited.
The suggested aging period is 18, 24, or 30 months.
Does not contain lactose or galactose.
