The first honey to receive the DOP (Protected Designation of Origin) label in Italy.
Organic and DOP acacia honey is harvested from the Robinia pseudoacacia during the second half of May in the Lunigiana region of Tuscany.
Liquid in form, it may become cloudy but never fully crystallizes. It has a very light color, ranging from almost colorless to straw yellow. Delicate bouquet, slightly fruity with floral notes. A distinctly sweet taste with a very slight acidity and no bitterness. A very delicate aroma, typically vanilla-like, not persistent, and without an aftertaste.
Easily soluble, it's perfect for sweetening beverages without altering their taste. It can be added to cake batter and used in fruit salads. It pairs well with fresh cheeses as well as aged blue cheeses.
