This coffee comes from the Kerala state on the south coast of India and is the highest quality monsooned coffee. This designation is related to the fact that after harvesting, green beans are exposed to monsoon winds for a few weeks during the rainy season.
This process reduces acidity and increases sweetness, resulting in a straw-yellow color. The combined roasting and processing method gives the coffee a unique flavor with sweet and spicy nuances.
