The Baraggia Biellese and Vercellese region is the northernmost area in Europe for the cultivation of Protected Designation of Origin (DOP) rice. It is characterized by clayey soils, cold and oxygenated water, and its microclimate is influenced by the cool currents from the Alps.
The rice is cultivated using traditional and non-invasive methods. Its DOP designation ensures the origin and traceability of the product, which can only be grown and processed exclusively within the recognized DOP territory.
The rice is processed using stone mills and low temperatures. This method ensures that the rice grain retains its starch integrity, unlike in hot processes (industrial methods). As a result, the rice maintains all its specific organoleptic properties.
The exclusive presence of the rice specified on the label is guaranteed. Similar varieties cannot be mixed in. The rice cooks uniformly and evenly.
