Vinification and ageing: it begins with skin maceration in a temperature-regulating vat for around seven days. After racking, the alcoholic fermentation is completed in steel for ten days. The wine is then placed in barrels, 40% new and 60% second passage, where malolactic fermentation takes place at a constant temperature of 20° for two months. It then matures in barrels for a total of 12 months. The refining is completed by a further passage in large barrels lasting approximately 12 months. Finally, the wine is decanted into steel vats and goes into the bottling phase without filtration. The bottles remain in the cellar for another 8 months, before being put on the market.
Tasting characteristics: intense red with garnet reflections, it releases fresh aromas of small red fruits, undergrowth and faded rose which evolve towards balsamic and spicy notes. On the palate, it is rich and complex, thanks to the finesse of the tannins and the marked acid vein, which give it a touch of extreme elegance. With its balanced temperament, it fully reflects the characteristics of the Monforte region.
